About the Recipe

What a flavorful and colorful mix of veggies, beans and avocado, wrapped in tortillas! It makes for a delicious and filling meal, while some would say quite addicting


  • 8 small tortillas

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 bell peppers, diced

  • 2 garlic cloves, minced

  • 1 can black beans, drained and rinsed

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • Salt and pepper, to taste

  • Avocado, diced

  • Fresh cilantro, chopped


Step 1

Heat olive oil in a large skillet over medium heat. Add onion, bell peppers, and garlic. Cook for 5-7 minutes, until vegetables are softened.

Step 2

Stir in black beans, cumin, chili powder, salt, and pepper. Cook for another 5-7 minutes.

Step 3

Warm tortillas in the oven or on the stovetop.

Step 4

To assemble, place a spoonful of the bean mixture onto each tortilla, then top with diced avocado and cilantro.

Step 5

Serve hot and enjoy!
