This chickpea salad is perfect for a quick and easy lunch or dinner. It's packed with protein and fiber and can be made in just 10 minutes.
1 can chickpeas, drained and rinsed
1 small cucumber, diced
1 small bell pepper, diced
1/4 red onion, diced
2 tbsp chopped parsley
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste
In a large bowl, mix together the chickpeas, cucumber, bell pepper, red onion, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Pour the dressing over the salad and toss to combine.
